How much do you know about the types of cocoa beans? Common cocoa beans can be roughly divided into three types: Criollo, Forastero and Trinitario.
Criollo is commonly found in Central and South America and is the best cocoa variety. This cocoa bean has a floral, fruity, and nutty aroma, but because of its small fruit and weak constitution, it is vulnerable to pests and diseases, so the yield is very limited, less than 5% of the global cocoa production;
Forastero is relatively crude, and its yield is much higher than other varieties. It is usually distributed in South America and West Africa, and its output accounts for more than 80% of the world's cocoa. However, the coarse-grained Forastero is often regarded as synonymous with industrial chocolate because of its bitter taste, high tannins and mediocre taste.
Trinitario is a hybrid of Criollo and Forastero, so it inherits the high yield of Forastero and the aromaticity of Criollo, making it a compromise. Trinitario usually has a flavor of spices, earth and fruit.
In addition to these, many producing areas have their own unique cocoa varieties, such as Porcelana and Caranero in Venezuela, Nacional in Ecuador, etc., which are mentioned below.
